Gyuto is very similar to Western chef's knife, which is used for cutting meats and large foods. Santoku is an All-Purpose knife with a flat edge; it is well suited to cutting meat, fish, and vegetables. The Bunka knife has almost the same shape as Santoku, and the triangle-shaped tip area is very useful to cut fish and meats. Nakiri has a Square-tipped blade, it is very efficient with chopping, slicing, and mincing vegetables and fruits. Sashimi knife is a slicer knife that has a long and thin blade and is good for cutting large pieces of meat like raw fish and steaks. Petty knife’s blade shape is based on Gyuto but smaller in size, it is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables.
